Spring 2025 Release Wines:

2022 Petite Sirah

Sweet aromas of chocolate dipped berries, and strawberry geleé are accentuated with spicier aromas of toasted campfire marshmallows,  cardamom and vanilla.  These sweet and spicy aromas are rounded out with a finish of cocoa and toasted oak.  On the palate, the wine is dry with juicy acidity that lead to a pleasant finish with flavors of dark chocolate and black cherries.  This is a perfect pairing for dessert.  A bitter-sweet chocolate torte or chocolate covered cherries or berries would be a perfect complement to this Petite Sirah.

2023 Cuvée Colina
Varietals: Sangiovese, Cabernet Sauvignon and Petite Sirah

Translated from Italian meaning “Beautiful Hills” Cuvée Colina gives homage to the hilly terroir that is ou vineyard and much of the East side of Paso Robles. This Italian inspired blend brings the traditional flavors of a Tuscan Red of red cherry, mountain berry, and dark strawberry.  The Cabernet in the blend brings structure and herbal notes of eucalyptus and leather.  On the palate, the wine has bright acidity and a medium body.  This medium red blend is a great compliment to your spring and summer BBQs.  Griiled meats flavored with fresh herbs.  Street tacos- steak or carnitas with onion and cilantro.

2023 SFR Red Blend
Varietals: Petite Sirah, Cabernet Sauvignon, Syrah, Zinfandel

Our signature blend brings aromas of black cherry, black raspberry, and plump ripe strawberries with spicy aromas of pink peppercorn, mesquite, and anise.  The nose also has floral notes of rose, violet and plumeria.  This easy drinking red blend has a full bodied palate of well integrated tannins, juicy acidity and warmth.  The finish has savory notes of black pepper accompanied by dark chocolate.  This is a full bodied wine that can stand up to meatier pairings or to enjoy on its own on a cool fall evening or cold winter night by the fireplace.  

2023 Bodega Aparador
Varietals: Grenache,Tempranillo, and Syrah

Our take on a Spanish blend is back for another vintage!  The Grenache and Tempranillo bring aromas of mixed berry, strawberry and mulberry jam blended with floral notes of violet and rose.  The Syrah bring flavors of ruby chocolate, vanilla and spices of pepper and cinnamon sugar pie crust.  On the palate, the ripe tannins and bright acidity lead to a nice complexity and lingering finish of ripe red berry.  This is a great summer BBQ wine!  Grill up some skirt steak and grilled vegetables with some mesquite spices and enjoy a glass of Bodega Aparador! 

2023 Syrah

Aromas of blueberries and red plum combined with spicy and mineral aromas of black pepper, anise and vanilla lead to a complex nose. On the palate, savory notes of black pepper and herbs blend with a note of mulberry jam.  This year’s Syrah is well balanced with silky tannins on the palate and lead to a savory chocolatey finish.

Fall 2025 Release Wines:

2023 Zinfandel

Aromas of blueberries, blackberries, dark fig and dates lean into more savory notes of BBQ mesquite and grilled portabellos.  Floral notes of deep rose, wild violets and plumeria create a beautiful complexity on the nose. A slight sweetness rounds out the soft tannins on the mid-palate.  The tangy acidity makes the fruit pop on the palate and makes you want to go back for another sip.  This wine pairs great with a backyard summer BBQ.

2023 Kaia Lee
Varietals: Zinfandel, Malbec, & Syrah

On the nose, dark red fruit notes of black raspberry and black cherry are blended with notes of rose, mint and dark chocolate.  The Syrah adds a distinct pepperiness on the nose and the palate.  This blend is full bodied with a balanced tannic structure.  The bright acidity leans towards a blueberry/ blackberry and dark chocolate finish.

2023 Cabyrah
Varietals: Cabernet & Syrah

This classic Dresser blend mimics the great Shiraz-Cab blends of Australia. The wine opens to a beautiful nose of blue plum, violet, candied red licorice “red vines” and cocoa.  The Syrah adds a pepperiness and red spice character on the nose and the palate.  On the palate, the tannins are well integrated and structured.  The tannin structure of this blend makes this a nice pairing with heavier red meats like a porterhouse steak or lamb chop.  The blend also has a lengthy spiced plum finish.

2023 Lajur
Varietals: Cabernet, Syrah, Zinfandel, & Petite Sirah

A blend of our single favorite barrel each of Cabernet Sauvignon, Syrah, Zinfandel, and Petite Sirah.  The initial fruit aromas are tart red and black fruits of blackberry, black cherry and red plum.  Savory earthy aromas of eggplant, Portobello mushrooms and black olive develop as the wine evolves in the glass. The aromas are rounded out by toasted coconut and vanilla from the barrel.  This full-bodied red blend has juicy acidity, well structured tannins, and a savory finish of pepper and earthy truffle.  This wine can be enjoyed now or be aged 3-5 years and will be even more savory and rounder with velvety tannins.  This is a great wine to pair with hearty root vegetable dishes or stews.
